Potato Omelette Recipe


Ingredients for 4 people:

* 4 large potatoes
* Grated Parmesan cheese
* Oil for frying
* Parsley
* Salt
* 6 eggs

Preparation:

Wash, peel and cut potatoes into cubes
Later in a shallow dish prepare chopped eggs
and add the Parmesan, salt and chopped parsley.
Put the olive oil to heat in a pan
and slowly pour the potatoes cut into small pieces.
Cook the potatoes until golden brown and help you with a wooden spoon.
Let cool the potatoes into cubes cooked for just over 5 minutes;
then carefully add the chopped eggs to cover all the potatoes and cook for 5 minutes the omelette.
Before serving dry excess oil with kitchen paper.
